When preparing your reels for a film to DVD transfer, you may notice a strong vinegar-like smell after opening the canister, especially if it’s been a while since you last pulled it out of the can. This odor signals a type of film decay known as “vinegar syndrome.” If you find that one or more reels show this condition, isolate them immediately to prevent it from spreading to the rest of your collection.

What Is Vinegar Syndrome & Why Does It Happen?

Beginning in 1948, the film industry replaced nitrate film with cellulose triacetate, assuming it would be a stable long-term material. Unfortunately, it wasn’t designed to last forever, and its instability went unrecognized for years. As these films age, the cellulose base breaks down, releasing acetic acid, the same chemical that gives vinegar its smell.

This process accelerates in warm or humid environments. Film stored in coastal or tropical climates deteriorates faster than film kept in cool, dry conditions. Over time, this chemical instability has become one of the greatest challenges in film preservation.

At the molecular level, heat and moisture cause the acetyl groups in the film’s plastic base to separate from the cellulose chains. Once this happens, acetic acid builds up within the material, diffuses outward, and produces that distinct vinegar odor.

Stages Of Film Degradation

The progression of vinegar syndrome occurs in several identifiable stages:

  • Initial Breakdown: Acetic acid begins to form, creating a strong vinegar smell, the earliest warning sign of degradation.
